I’ve made several new recipes in the last month that I really liked. I’m trying new things because my appetite has been “off” for the last several months with all the transition in my life. There are many nights and weekends that I am tempted to stop and get something on the way home instead of heading home and taking 30 minutes to make a healthy homemade meal.
I always feel better once the meal is made and my body thanks me as well:-) When I hear people say that they aren’t motivated to cook healthy foods or they feel in a “rut,” I encourage them to do a couple things:
- Try NEW recipes. This is what has been helping me lately. The truth is after a long day, I’m not always motivated to cook either.
- Go back to healthy recipes that they really like. CLICK HERE for my favorite “go-to” recipe.
- Buy things that make it easier to cook like pre-cut veggies, pre-washed salad mixes, or protein that is already cooked for you like shredded chicken.
Here are the recipes that we have tried in the last month or so:
30 Minute Loaded Taco Skillet from Lexi’s Clean Kitchen
Easy Egg Roll in a Bowl from The Real Food Dietitians
Banana Oatmeal Blender Pancakes from The Healthy Maven
Gluten Free Hidden Veggie Mac & Cheese from Lexi’s Clean Kitchen (I used Banza penne pasta in this recipe)
Southwest Quinoa Bake from The Real Food Dietitians
You will notice that several of these recipes include gluten free grains. I have been experimenting with adding in some gluten free grains in my diet to see how my body looks and feels from them. I pay attention to things like digestion, energy levels, sleep, mood, and how good my workouts are. I also don’t have any specific body composition goals right now so it seems to be working for me.
I hope you have a wonderful weekend and encourage you to get in the kitchen!!!:-)
